Team - Here is an easy and healthy recipe that cost me less than $7. This Tuna Wrap with Beans tastes amazing and only takes a few minutes to prepare.
Friday is the perfect day to make a meal that can be classified as a quick "grab and eat." Saturdays are a blur for me until lunchtime. I wake up, eat breakfast (sometimes on the go), teach a boot camp class at 9 and another boot camp at 11. This wrap is a great meal to prepare beforehand because I come home, eat, nap and enjoy the rest of my weekend!
1. First, gather your ingredients from your local supermarket. Nothing is brand specific.
- 2 Cans of Light Tuna - $1.50
- Wraps - $3.39
- 1/2 Can of Cannellini Beans - $1.39
- Chopped Onion - $0.55
- Tomato - donated by an awesome coworker
- Pepper - had in the house
- Lettuce - had in the house
- Medium sized mixing bowl
2. Take your tuna and open, drain the liquids and place in a bowl.
3. Take 1/2 of the Cannellini Beans and place them into a container.
4. Here comes the hardest part. Cutting up the onions. There really isn't an easy way to do it by hand, so just bite the bullet, shed some tears and slice up your onion. (I won't show the pitiful picture of me crying)
5. The bulk of the recipe is complete. Now combine all of the above ingredients into a medium sized mixing bowl. As you can see below, I just did a light stir and tried not to bust any of the beans. Grab your wraps and let's move on. I can barely wait! I'm starting to get hungry.
6. Lay out your wrap and place a healthy portion into the wrap. Add some fresh tomato's, lettuce and pepper in the wrap as well. A special thanks to Kate (my coworker) for the tomato, it was perfect! Yum!
7. Get some fresh spring mix and a banana and enjoy a perfect afternoon snack. Creating this meal had me starving...hence the reason for the large bite out of the wrap.
