High Protein Salad

Hi Team - Happy Friday! I hope all of you had a healthy week.

Today's recipe is a healthy, easy to make, high protein salad.  This salad is complete in minutes, but don't be mistaken...it's delicious.



This is a great pick for all of you gluten and dairy free people out there. (I'm lactose intolerant, so you'll rarely see me cook with cheese or dairy milk)

Grab your ingredients:

Baby Spinach
Kidney Beans
2 Hard Boiled Eggs


1.  Go ahead and start boiling the eggs.  I boil my eggs by adding enough water in a sauce pan just to cover the eggs.  There is a greater chance that the eggs will crack if you add a lot of water.  Boil them for 10 minutes and let them simmer for 5 minutes.  Run them under cold water then spin them on a flat surface.  If they wobble around, you should boil them longer.  If they spend, you're 80% done with this recipe.


2.  Lay your baby spinach out on a plate or in a bowl


3.  Drain the kidney beans


4.  Your eggs should be about done! Test them out, by spinning them, and if they're ready go ahead and peel and dice them up.


5.  Finally, put the eggs on the salad first, then add the beans on top.


Honestly, an easy and tasty salad.

  1. @Anonymous Feel free to add a dressing! I personally like my salads dry, but let me know which dressing you add and I'll try it out.
